Ingredients

The star of the dish is 12 roasted sweet potatoes to serve as the base of the casserole. We also include baking essentials like fresh farm eggs, milk, melted butter, and salt. Then to bring in the sweetness, we include brown sugar, vanilla, and cinnamon to pair with the sweet potato flavor. The golden streusel topping consists of ice-cold butter, flour, pecans, and more brown sugar, all gently combined.

Preparation

We begin by roasting all of our sweet potatoes in a 350-degree oven for an hour to ensure they get nice and soft, then leave them to cool for an hour. We gently peel the skin off and place what’s left in a bowl for mashing. After setting the sweet potato aside, we whisk together eggs, brown sugar, milk, melted butter, salt, vanilla, and cinnamon to gently combine with our sweet potato mash. Finally, we distribute the mixture across our pan and finish it off with our streusel topping to bake.
